Craftsmanship & Materials science

The Zhen QE Series relies on Japanese Aogami #2 Steel, A traditional carbon steel, known for its exceptional sharpness, high edge retention, and excellent resharpenability. With a hardness of up to 64 HRC, this blade is particularly suitable for precise, clean cuts.

The composite steel construction gives the blade added stability, while the polished edge provides a refined finish. The ergonomic, octagonal maple handle with white buffalo horn not only offers a traditional look but also optimal balance and control.

A notice: Aogami #2 is made of non-stainless steel. For a long lifespan, we recommend cleaning the knife after each use and then drying it thoroughly. Do not clean the knife in the dishwasher.

A Santoku knife for those who appreciate traditional Japanese cutting performance and consciously want to work with high-quality steel.

Care instructions

Blade wear depends on steel quality, usage, and care. Our Hocho knives are made from high-quality Damascus and composite steels – with proper care, your knife will remain sharp and reliable for many years.

Here's how to keep your knife in top condition:
✔ Always cut on wooden, plastic, or rubber boards.
✔ Wash your knife by hand after each use and dry it immediately.
✔ Store it safely in a knife block, magnetic strip holder, or knife sheath.
✔ A clean cutting technique noticeably extends the sharpness of the blade.
✔ Sharpening stones are best suited for resharpening.

You should avoid this:

❗️ Never leave your knife in the sink – clean it immediately.
❗️ Do not clean in the dishwasher.
❗️ Do not cut on glass, ceramic, marble or steel surfaces.
❗️ Do not use the cutting edge to push food off the board – use the back of the blade instead.
❗️ Use your knife only for cutting food – not as a can opener, screwdriver or hammer.
